Pour a litre of our A2A2 raw milk into a jar, let the cream rise overnight, skim it off and churn it for 10 minutes. Add a pinch of salt and you have the richest, freshest butter you have ever tasted.
Heat a cast-iron pan with a knob of our farm butter until it foams. Crack two of our fresh chicken eggs in — the yolks will be deep orange, standing tall. Two minutes, baste with butter, salt and pepper. Perfect.
Season a 3-lb chuck roast generously. Sear in a Dutch oven until dark brown on all sides. Add onion, garlic, stock and a splash of red wine. Cover and braise at 300°F for 3 hours until falling apart. Grass-fed beef braises beautifully — the fat is clean and the flavour is deep.
