You tell us how you want it cut. We handle the scheduling, transport, processing and packaging. You collect a freezer full of exactly the beef you asked for.
All beef goes through a USDA-inspected facility. Every individual cut is federally inspected — required for retail sale and the gold standard for food safety.
Steak thickness, roast sizes, ground beef ratio, organ preferences, fat trim level, bone-in vs boneless. No generic boxes — your specification.
All cuts are vacuum-sealed, labelled with cut name and weight, and frozen before pickup. Properly sealed grass-fed beef keeps 12+ months.
Scheduling, transport to the facility and cold storage coordination — all handled. You simply collect your finished order.



Our primary programme processes our own farm-raised beef for share customers. For outside livestock, contact us to discuss availability.
USDA-inspected allows meat to be sold to the public by the cut. Custom-exempt is for the owner's personal use only. All Rural Valley Farms beef uses USDA-inspected facilities.
Typically 3–4 weeks from processing date to pickup, including hanging time, cutting, vacuum-sealing, freezing and order preparation.
We hang beef for 14–21 days. Longer hanging times improve tenderness and deepen flavour. Custom dry-ageing can be arranged on request.
Our processing partner is in Washington County — approximately 30–40 minutes from most Pittsburgh neighbourhoods.
