Ribeye

The connoisseur\'s favourite — a generous ribbon of fat through the eye that bastes the meat as it sears. Available in Choice, Prime and Wagyu grades.

Scotch Fillet

Cut from the rib with the bone removed — tender, juicy and beautifully marbled. Steakhouse quality at home without the bone to work around.

Sirloin

Firm, lean and packed with honest beef flavour. The dependable everyday steak that rewards a hot, fast sear and a few minutes of rest.

Filet Mignon

Cut from the tenderloin, the most tender muscle on the animal — mild, lean and meltingly soft, sliced into thick medallions to order.

Buying Beef from Rural Valley Farms

How is the beef raised?

Our cattle are pasture-raised and grass-fed with no added hormones. Beef is dry-aged for depth of flavour and butchered in small batches.

What is the difference between Choice, Prime and Wagyu?

Choice is excellent everyday beef with good marbling. Prime carries more intramuscular fat for extra juiciness. Wagyu is the most intensely marbled, prized for richness and tenderness.

How does ordering and pickup work?

Build your cut online, add it to your basket and order. We hand-cut it fresh and have it ready for collection at the farm. Shipping is coming soon.

How are prices calculated?

Steaks are priced by the pound. The total updates live as you adjust the thickness and grade, so it always reflects the exact cut you have built.
